Wonderful book. The author knows and explains all the technicalities of baking, different sourdoughs, even how the shaping of a loaf or bun effects its keeping ability and taste.

BUT warning: the translation is not very good. You have to use your mind sometimes. Example, in the chapter on yeast, baking sodas etc are referred to as "artificial yeast", there is talk of rolling doughs out to "platters" rather than discs. and so on. But this book will take you further on your journey to becoming a great baker than any other I have seen.
